Cooking Classy’s Parmesan Baked Zucchini is a Cheesy Delight

Zucchini is one of the most versatile veggies on the market, and new ways to prepare them are constantly popping up. Baked zucchinis are a timeless classic that’s never going away, but you can make them even better by adding some cheese to the mix.

If you still haven’t mastered your own recipe for this dish, Jaclyn Bell of Cooking Classy shared one on her blog. You can prepare them in your oven in less than 30 minutes and serve them as a delicious appetizer at your dinner parties.

Ingredients

  • 2 lbs. zucchini (6 small or 4 medium zucchinis)
  • 2 Tbsp olive oil
  • 2 garlic cloves
  • 1 1/2 tsp Italian seasoning
  • 1/2 cup grated parmesan cheese
  • 2 Tbsp parsley
  • salt and pepper

Instructions

  1. While preheating the oven to 350 degrees, line a baking sheet with aluminum foil and spray it with non-stick cooking spray to make the cleanup easier.
  2. Pour olive oil, minced garlic, Italian seasoning, salt, and pepper into a mixing bowl and stir them together.
  3. Slice the zucchinis into 1/2-inch thick rings, place them in a large mixing bowl with the oil mixture, and toss them together until evenly coated.
  4. Place the zucchinis in the baking sheet, evenly spread into a single layer, and top them with grated parmesan.
  5. Bake the zucchinis for about 7-9 minutes, until they soften. Transfer them to an oven rack close to the broiler, and leave them there for about 2-3 minutes, until the cheese is golden brown.
  6. Sprinkle the baked zucchinis with finely chopped fresh parsley and serve while still warm.
