Wrong Potatoes

Some potatoes are better than others, and you should use starchy varieties when making mashed potatoes to achieve perfect fluffy texture.

No Salt

Potatoes absorb the water that they’re cooked in, so it’s always a good idea to salt them right away, so they wouldn’t be bland and tasteless later.

Cold Ingredients

Don’t add butter, cream, or milk to your potatoes straight out of the fridge. They’ll absorb better if you give them some time to warm up, and you won’t have any trouble mixing them.

Hot Water

People often boil their potatoes in already-hot water in the hope they’ll boil faster, but this is doing them more harm than good. Potatoes can easily fall apart if the water is too hot from the very start, and their insides may end up undercooked.
