Choux Pastry is Easier Than You Think!

Choux pastry can seem scary because it’s what you use to make eclairs, cream puffs, and more. But, in reality, it’s one of the easiest to make and comes together super quickly!

Ingredients

  • 8 tablespoons of unsalted butter cut into 8 pieces
  • 1/2 cup water
  • 1/2 cup 2% or whole milk
  • 1/4 teaspoon salt
  • 2 teaspoons of sugar
  • 1 cup all-purpose flour 
  • 4 large eggs, beaten

Instructions

  1. Put the water, butter, milk, salt, and sugar into a pot over medium heat. 
  2. Once the mixture starts to simmer, turn down the heat to low and add all the flour. 
  3. Use a wooden spoon to stir the flour so it becomes one big ball, and mix thoroughly for 1 minute. 
  4. Take it off the heat and let it cool for a few minutes. 
  5. While the pastry cools, beat 4 eggs in a small bowl. 
  6. Add in the eggs in 3-4 stages while using a stand or hand mixer on a low speed. The dough will look like it’s separated, but just keep going and it’ll come together. You might not need all 4 eggs, so stop adding when the pastry is shiny and thick. 
  7. Once the eggs are in, the pastry is done! You can either use it right away or refrigerate for up to 3 days.
