Vegetable soups come in many different shapes and forms, and there’s nothing better than the creamy variety. We’re pretty much obsessed with any vegetable soup that begins with “cream of”—and that’s why we can’t wait to show you this incredible cream of broccoli soup recipe. Here’s how it’s done!

Ingredients

  • 6 cups beef broth
  • Half a stick of butter
  • 1/3 tablespoons flour
  • 2 pounds defrosted broccoli
  • 2/3 cup heavy cream
  • 1/2 cup milk
  • Salt
  • Pepper
  • Garlic powder

Instructions

Start off your journey by boiling up your beef broth. In a separate pan, melt the butter over low heat. Add the flour to the melted butter and mix it up till smooth. When you’re done mixing, add it to the steaming broth in the pot, while stirring frequently.

Now it’s time to add the broccoli to the pot. Allow your tree-like vegetables to cook in there for 12 minutes, and then you must puree the broccoli until it’s smooth. Add the cream and the milk, and then the salt, pepper, and garlic powder to taste. Keep mixing it for another 15 minutes over medium heat until you’ve achieved the perfect consistency. The soup is now ready to be served! Add some parmesan on top if you feel like it.
