Carrot and Coriander Soup Recipe

Is there anything that is more valuable than your favorite veggies being served as a healthy and nutritious soup? Probably Not. Let’s talk about one such hale and hearty offering: the coriander and carrot soup.

With the help of only limited ingredients, you can easily prepare this soup and add the nutritional content in your main meal. The light, fresh, yummy and good looking soup promises to increase your craving every time you hear the word “carrot.”

Ingredients:

Olive oil
4 large carrots
Half large onion
Large bunch of chopped fresh coriander
90ml of vegetable stock.

Method:

Heat the oil in a large pan on medium heat.

Sauté onions and carrots in the pan for few minutes.

Pour in the vegetable stock and then add coriander.

Cook until the carrots are soft. Boil for 10-15 minutes.

Remove from gas and allow to cool a bit.

Puree the soup using a blender.

Serve in separate bowls after reheating.
