Ingredients
- 1 teaspoon vanilla extract
- 2 cups AP flour (organic)
- 1 large egg
- 1/4 teaspoon sea salt
- 1/2 cup butter
- 1 teaspoon baking soda (aluminum-free)
- 3/4 cup lightly packed brown sugar (organic)
- 1 cup buttermilk (organic)
- 1/2 teaspoon cinnamon ground
- 1 teaspoon baking powder
- 2 teaspoons instant espresso
- 1 cup miniature chocolate chips
For the topping you’ll need
- 2 teaspoons instant coffee granules
- 1 tablespoon cacao powder
- 1/3 cup packed brown sugar (organic)
- 1/4 cup miniature chocolate chips
- 1/4 teaspoon ground cinnamon
Instructions
- Set the oven to 375 F degrees and prepare a tin with 12 muffin cups.
- Mix the brown sugar and butter together. Add an egg and beat everything. You can now add the vanilla extract, buttermilk, and espresso granules.
- In another bowl mix the baking soda, flour, salt, baking powder, and cinnamon.
- Combine the dry and wet ingredients together. Include the chocolate chips in and mix.
- Fill all the muffin cups with the batter. You can use a scoop or a spoon.
- For the topping, mix all the ingredients together. Top the cappuccino muffins with the topping and leave them in the oven for 15 to 17 minutes.
