Cappuccino Muffins Are Next-Level Tasty

Muffins are so good, no matter if you’re having them as breakfast, snack, or a late-night treat. Everyone who likes baking will love this recipe for cappuccino muffins.

Ingredients

  • 1 teaspoon vanilla extract
  • 2 cups AP flour (organic)
  • 1 large egg
  • 1/4 teaspoon sea salt
  • 1/2 cup butter
  • 1 teaspoon baking soda (aluminum-free)
  • 3/4 cup lightly packed brown sugar (organic)
  • 1 cup buttermilk (organic)
  • 1/2 teaspoon cinnamon ground
  • 1 teaspoon baking powder
  • 2 teaspoons instant espresso
  • 1 cup miniature chocolate chips

For the topping you’ll need

  • 2 teaspoons instant coffee granules
  • 1 tablespoon cacao powder
  • 1/3 cup packed brown sugar (organic)
  • 1/4 cup miniature chocolate chips
  • 1/4 teaspoon ground cinnamon

Instructions

  • Set the oven to 375 F degrees and prepare a tin with 12 muffin cups.
  • Mix the brown sugar and butter together. Add an egg and beat everything. You can now add the vanilla extract, buttermilk, and espresso granules.
  • In another bowl mix the baking soda, flour, salt, baking powder, and cinnamon.
  • Combine the dry and wet ingredients together. Include the chocolate chips in and mix.
  • Fill all the muffin cups with the batter. You can use a scoop or a spoon.
  • For the topping, mix all the ingredients together. Top the cappuccino muffins with the topping and leave them in the oven for 15 to 17 minutes.
