Buffalo Chicken And Rice Casserole

If you have some leftover chicken and rice from your last dinner party and are unsure of what to do with it, then a scrumptious casserole is your perfect solution. Here is how you can cook up a scrumptious Buffalo Chicken and Rice Casserole that will be sure to make dinners more interesting.

Ingredients:

  • 1 cup shredded cheddar
  • 1 cup Ritz crackers
  • 1 tablespoon cooking oil
  • 1 onion
  • 1 celery stalk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 1/2 cup rice
  • 8 ounces cream cheese
  • 2 carrots
  • 2 cloves garlic
  • 3 cups chicken broth
  • 1 pound shredded chicken
  • 3/4 cup Buffalo sauce
  • salt to taste
  • black pepper to taste
  • blue cheese crumbles

Instructions

  1. Preheat oven to 400°F. Pour oil into a medium skillet and heat over a medium flame. Add slices of carrots, celery, and onion to the skillet, cooking for about 8 minutes until softened. Add garlic and cook for another minute.
  2. Add garlic powder and onion powder before seasoning with salt and pepper according to taste. Add rice to the skillet and cook for another 2 minutes, until toasted lightly.
  3. Place the rice mixture in a baking dish. Add cream cheese to the mix and stir thoroughly before adding the broth, chicken, and Buffalo sauce to the dish. Stir again and season with salt and pepper.
  4. Cover the dish with foil and bake the casserole for 40 to 45 minutes, until rice is tender.
  5. Stir casserole and add crackers and cheddar cheese. Return to oven and bake until the cheese is melted, for about 10 minutes.
  6. Top with blue cheese before serving.
