Black-eyed peas are an awesome way to change up your dinner game, especially if you are a vegetarian or vegan, but it’s also true for meat eaters. Black-eyed peasĀ are full of nutrients, protein, and have no fat! What’s best is that they can easily be made into many different cuisines, including southern, African, Asian, and more! Buying them dry is best because they’re the most nutritional and the most cost-effective, so let’s get to making them!

  1. First, soak your beans overnight. The more water you add to a bowl or pot with the dried beans the better because they really absorb it which makes cooking and digesting a lot easier later.
  2. Drain and rinse the beans.
  3. Cut up onion, garlic, and tomatoes, and put them in a pot with olive oil and salt.
  4. After the onions have become translucent, add in the following spices: paprika, onion powder, garlic powder, coriander, and cayenne.
  5. Pour in some tomato paste and let it cook out for just a minute or so.
  6. Then, add in the beans along with enough water or broth to cover the beans by at least 2 inches.
  7. Bring to a boil and then lower slightly and cook until the beans are soft, about 30 minutes.

Enjoy!
