Roasted vegetables make a delicious and versatile dish that can be both the centerpiece of a meal or a great side dish. But not all vegetables roast as well as others, and not all flavors combine.

Red Onion
Take one or two red onions and either cut them into chunks or slice them into fairly big pieces. The onion roasts better when it is not too fine.
Peppers
Take your pick of red, yellow or green peppers. Red pepper can go a little better with cheeses such as halloumi. Again, cut the peppers into chunks so they retain some moisture after they have been roasted.
Garlic
The best way to serve roasted garlic is to roast the whole clove. Finely sliced garlic runs the risk of burning. This can go really well on a skewer with the other vegetables on this list, or in a mixed tray in the oven.
Eggplant
Cut your eggplant into fairly thick slices. Season with salt and pepper. Roast eggplant makes a wonderful addition to mashed potato dishes or spicy curries.
