Best method for a quick Mexican breakfast

Be it Tacos, burritos or enchiladas, there’s a twist of flavor in every Mexican food you have. Same is the case with a typical Mexican breakfast. Not only it offers a rich ecstasy of gourmet appetite, it also acts as a blessing for our health. Here is a short recipe to prepare a quick Mexican breakfast.

Ingredients:

  • 2 roasted red peppers
  • 3 ripe tomatoes
  • Half cut lime
  • 4 onions
  • Olive oil
  • 8 corn tortillas (small flour) virgin olive oil
  • 5g butter
  • 4 large eggs

Directions: 

Prepare a quick salsa by chopping peppers, spring onions, and tomatoes. Take the juice from lime; squeeze it with olive oil into the mixture. With a knife, chop finely and mix together. Meanwhile, season and drizzle black beans on to a heating pan. On another cooking stove, heat a frying pan and toast the tortillas one at a time from all sides. Keep the tortillas warm under a towel after cooking. Fry the eggs in oil and butter. Place two tortillas on each plate and garnish with beans salsa and egg. Serve hot.
