Balsamic Grilled Vegetables are a Healthy, Tasty Side

Making a healthy side for all your meals in just 20 minutes doesn’t sound bad, right? This recipe will help you prepare balsamic grilled vegetables that are so tasty with a hint of sweetness. There is a list of ingredients you can see below, but our advice is to add all the other types that you like. The marinade is so easy to put together and make sure to leave the veggies in for at least half an hour.

Ingredients:

  • 1 cubed bell pepper
  • 1 cup grape tomatoes
  • 1 small zucchini sliced into 1/2” pieces
  • 8 oz mushrooms, cut into halves
  • 1 red onion cut into wedges

For the marinade:

  • 1 clove minced garlic
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh rosemary
  • 2 teaspoons balsamic vinegar
  • salt
  • pepper

Instructions:

  1. Get a large bowl and combine all the ingredients that you need for the marinade. Now, add the vegetables as well. Mix everything together.
  2. Leave the vegetables to marinate for at least half an hour. If you can, leave them overnight for 8 hours.
  3. Get a grilling basket and add the vegetables on it without the marinade. You can also use skewers.
  4. Grill them for 8 to 12 minutes. When the balsamic grilled vegetables are done serve them while hot as a side to the dishes or as the main course.
