Baked Pumpkin Pasta is the Best

Fall is almost upon us, which means all things pumpkin-flavored are about to descend on us. So, now is the perfect time to get ahead of the pumpkin craze and try something pumpkin-flavored before you get overwhelmed with it in the coming months.

There are, of course, various ways you can do that, but if you ask us, baked pumpkin pasta is the way to go. It is simply delicious and perfect for those wanting to try something new. Here is how to make it.

Ingredients:

  • 1/2 pound macaroni
  • 1 cup pumpkin puree
  • 1 cup milk
  • ½ cup grated parmesan
  • 1 red onion
  • 1 clove garlic
  • 1 tablespoon butter
  • 1 tablespoon flour
  • Pinch of salt
  • Pinch of oregano

Instructions:

  1. Boil the macaroni al dente.
  2. Melt the butter in a pan on medium heat. Chop the onion and garlic and add them to the pan.
  3. When the onion gets brown, add flour, salt, and oregano. Give it a thorough stir before adding pumpkin puree.
  4. After combining pumpkin puree with the rest of the pan content, pour in the milk. Keep mixing until you get a uniform mixture, and then remove it from the stove.
  5. Drain the macaroni and line them in a deep dish. Pour in the pumpkin sauce and stir until all macaroni is nicely covered.
  6. Sprinkle the grated parmesan onto the macaroni and bake in a preheated oven on 420F for around 10 minutes or until the cheese is completely melted.
  7. Let it cool off a bit, get yourself a slice, and dig in.
