It’s quick and easy to make with only about a 10 minute preparation time, and 1 hour and 35 minutes total cooking time where most of the time you can sit back and relax while your lemon bars form.

This recipe results in 20-40 squares which you can definitely share with multiple friends. The gooey soft texture of this lemon bar will leave you wanting more. Also, if you’re a big fan of citrusy deserts, you can make this extra sour.

Ingredients

Filling:

  • 6 large eggs
  • granulated white sugar
  • 6-7 lemons
  • freshly squeezed lemon juice
  • 1 cup flour
  • confectioner’s sugar for the topping

Crust:

  • unsalted butter
  • granulated sugar
  • flour
  • kosher salt

Instructions:

  1. Preheat the oven to 500 degrees.
  2. Start with making the crust.
  3. Cream the butter and sugar and mix lightly in a bowl with an electric mixer.
  4. Mix in the flour and salt adjusting the mixer to low.
  5. Add a chunk of butter and mix more.
  6. For the dough, chuck it onto a wooden board and form it into a ball.

There’s nothing like a bowl of warm soup to make the cold holidays more cheerful. It also brings us back to our childhood days when our mom would serve soup and it’s a great dish to reminisce on and to recreate. Cold tomato soup is a twist on the regular hot tomato soup and this chilled version will certainly quench your thirst on hot summer days. If you’re looking to try a cold soup or if you’ve never tried one before this is the perfect soup to experiment with!

Ingredients:

  • ripe tomatoes about 10 pieces
  • baguette (for serving with the soup if you want some extra carbs)
  • croutons for topping (optional)
  • white onion
  • garlic cloves
  • sweet red bell pepper
  • red wine vinegar (for a sour and sweet taste)
  • extra virgin olive oil
  • pink salt
  • pepper
  • vegetable broth

Instructions:

  1. Wash the tomatoes thoroughly and soak them in hot water for 5-10 minutes.
  2. While it’s soaking chop the red bell pepper and white onion.
  3. After the tomatoes have been soaked strain them and place it in a blender.
  4. Pour the veggie broth in about a cup’s worth.
  5. Chuck in the sliced bell pepper, white onion, and garlic.
  6. Blend until smooth.
  7. Warm-up a pot on the stove and cook the soup for another 15 minutes or until warm.
  8. After it’s cooked take it out and let it cool off.
  9. Place it in the fridge for 2-3 hours until chilled and before you serve it, top it with croutons!

There’s nothing like a bowl of warm soup to make the cold holidays more cheerful. It also brings us back to our childhood days when our mom would serve soup and it’s a great dish to reminisce on and to recreate. Cold tomato soup is a twist on the regular hot tomato soup and this chilled version will certainly quench your thirst on hot summer days. If you’re looking to try a cold soup or if you’ve never tried one before this is the perfect soup to experiment with!

Ingredients:

  • ripe tomatoes about 10 pieces
  • baguette (for serving with the soup if you want some extra carbs)
  • croutons for topping (optional)
  • white onion
  • garlic cloves
  • sweet red bell pepper
  • red wine vinegar (for a sour and sweet taste)
  • extra virgin olive oil
  • pink salt
  • pepper
  • vegetable broth

Instructions:

  1. Wash the tomatoes thoroughly and soak them in hot water for 5-10 minutes.
  2. While it’s soaking chop the red bell pepper and white onion.
  3. After the tomatoes have been soaked strain them and place it in a blender.
  4. Pour the veggie broth in about a cup’s worth.
  5. Chuck in the sliced bell pepper, white onion, and garlic.
  6. Blend until smooth.
  7. Warm-up a pot on the stove and cook the soup for another 15 minutes or until warm.
  8. After it’s cooked take it out and let it cool off.
  9. Place it in the fridge for 2-3 hours until chilled and before you serve it, top it with croutons!
