Do you need a super healthy dinner that’s ready and on the table in under one hour? Then look no further than this incredibly simple roasting tin dinner, which provides up to four portions of fruit and vegetables. Make sure you use small baby potatoes, as not only will the flavor be better, these tiny potatoes cook in less time than larger varieties. To make this dish vegan, simply swap out the cheese for a dairy-free alternative, or crumble over some crushed nuts at the end of the cooking time.

Ingredients (to serve 4):

  • 1 1/2 cups of baby potatoes

    2 leeks2 tablespoons of olive oil1 cup of tomato passata2 heads of broccoli 1 tin of butter beans1 vegetable stock cube1 cup of boiling water1/2 cup of cheese, grated

Instructions:

  1. Bring a pan of water to the boil. Peel any discolored parts of the potatoes off, and boil the potatoes for 6 – 7 minutes.
  2. Meanwhile, cut the broccoli heads into small pieces (including the stalks).
  3. Use 1 tablespoon of olive oil to coat the broccoli, and place the broccoli in a large roasting tin.
  4. Place the broccoli in an oven heated to 400 °F. Roast for 10 minutes.
  5. Finely slice the leeks, and use the remaining olive oil to fry them in a large frying pan, taking care that they don’t burn. Cook until they are soft.
  6. Drain the potatoes, and add them along with the tomato passata to the roasting broccoli. Roast for a further 5 minutes.
  7. Stir the stock cube into the boiling water until it dissolves. Add the stock to the roasting tin. Roast for a further 15 minutes.
  8. Add the leeks as a top layer over the rest of the vegetables, and top with the grated cheese. Roast for a further 3 minutes.
  9. Remove the tin from the oven and portion the vegetables out into servings. This dish goes great with a fresh green salad on the side.

If you’re hosting a dinner party, you may want dishes that are quite refined to bring out to impress your guests. However, if you’re hosting a large event where there will be lots of hungry guests, sometimes the most important thing isn’t that your food looks beautiful and impressive, but that there’s enough to go around to keep everyone happy. Enter, these seasoned fries—tasty, satisfying, and healthier than traditional fries, these are perfect alongside any kind of cooked fish or meat, as a starter, or even as the main event themselves—although if you’re serving them as a main, you may want to consider loading them with cheese, fried vegetables or other toppings.

Ingredients (to serve 12):

  • 11 cups of white potatoes, scrubbed and peeled of any marks and blemishes
  • 10 fl ounces of vegetable oil
  • Paper towels, for soaking up excess oil
  • 2 teaspoons of salt
  • 2 teaspoons of garlic granules
  • 2 teaspoons of smoked paprika
  • 2 teaspoons of oregano

Instructions:

  1. Mix all of the seasonings together.
  2. Slice the potatoes into rounds about half an inch thick. Try to make sure the slices are about the same size.
  3. Bring a pan of water to a boil, and boil the potato slices for 7 minutes.
  4. Drain the water from the pan, and leave the potatoes to steam off excess water for 1-2 minutes.
  5. In a large frying pan, heat 1/4 of the total amount of oil.
  6. Add 1/4 of the total amount of potato slices to the hot oil, making sure each slice is in contact with the oil.
  7. Fry for 1-2 minutes, and then sprinkle 1/4 of the total amount of seasoning over the potatoes.
  8. Fry for a further 4 – 5 minutes, and then flip the slices over using a fork or a spatula. Fry for a further 3-4 minutes.
  9. Carefully remove the slices from the pan, trying not to tip out too much of the oil. Place them on a plate or board lined with paper towels.
  10. Fry the remainder of the potato in batches, ensuring that every slice comes into contact with the oil to create a crispy finish.
  11. To serve the fries, heat them in a low oven for 10 minutes.

Decadent and rich, yet surprisingly easy to make, these can be ready in under an hour, meaning you and your family could be enjoying that Easter chocolate in an entirely new way very soon! You can adjust the amount of sugar in the brownies if you’d prefer something a little less sweet.

Ingredients (to make 12):

  • 3/4 cup of plain flour
  • 1 1/2 cups of unsalted butter
  • 2 cups of chocolate
  • 2 tablespoons of cocoa powder
  • 3 large eggs
  • 1 1/2 cups of caster sugar

Instructions:

  1. Melt the butter and chocolate together in a bowl or pan. Leave aside to cool.
  2. Preheat the oven to 380° F.
  3. Line and grease a 10-inch x 10-inch baking tray.
  4. In a large mixing bowl, sift together the flour and the cocoa powder.
  5. In a separate bowl, whisk together the eggs and the sugar. The mixture should become pale and double in volume.
  6. Pour the chocolate mix into the eggs and sugar, folding gently with a spoon to mix them together.
  7. Sift in the flour and cocoa powder into the mix, folding this in with a spoon.
  8. Pour the mix into the lined tin, and bake for 25 minutes. The brownie is ready when the middle doesn’t wobble when the oven tray is shaken, it should have a glossy sheen on top. Allow to cool before serving.

Basque cheesecake is a great showstopper of a cake to bring out at birthdays, anniversaries and other special occasions. It’s a bit less rich than New York-style cheesecake, and it goes perfectly with some fresh berries on the side. It also pairs nicely with a small glass of sherry, as the dry, crumbly richness of the cake complements the syrupy sweetness of the drink very well. However you choose to serve it, this Basque cheesecake recipe never fails, so you don’t have to worry about split sides or an undercooked middle.

Ingredients:

  • 3 cups and 2 tablespoons of cream cheese
  • 1 cup and 2 tablespoons of caster sugar
  • 2 tablespoons of gluten-free flour
  • 3/4 cup of soured cream
  • 4 eggs
  • 2 teaspoons of vanilla

Instructions:

  1. Preheat the oven to 460 °F.
  2. Grease and line a deep 10-inch cake tin. Use plenty of parchment paper, it needs to come up and over the sides of the tin.
  3. Use a food mixer to whisk together the soft cheese and the sugar. Test it by rubbing a small amount between your fingers, if it feels grainy it needs more whisking.

Ingredients:

  • 3/4 cup of dried red lentils
  • 1 can of coconut milk
  • Half a white onion
  • 3 cloves of garlic
  • 1 thumb sized piece of ginger 
  • 2 tablespoons of oil
  • 1 teaspoon each of: garam masala, grind cumin, ground coriander and ground ginger
  • 1 vegetable stock cube 
  • 1/2 cup of water

Instructions:

  1. Finely dice the onion, slice the garlic cloves and peel and grate the ginger.
  2. Heat the oil in a large saucepan, and then add the onion, garlic and ginger.
  3. Cook for 10 minutes, and then add the ground spices. Stir well and cook for 2 minutes.
  4. Add the red lentils and stir well.
  5. Add the stock cube, cook for 1 minute and then add the water and coconut milk.
  6. Allow the soup to simmer for 10 – 15 minutes, then remove from the heat and serve.

Ingredients (to serve 4):

  • 3 large bell peppers
  • 4 cloves of garlic
  • 1 tin of butter beans
  • 1 onion

  • Salt and pepper

Instructions:

  1. Deseed and quarter the peppers, roughly smash the garlic cloves in a pestle and mortar. Halve the onions.

Blondies are very similar to brownies, just without the cocoa content. The lack of chocolate means you can experiment with a range of flavors and textures, and as delicious as brownies are sometimes it’s nice to try something a little different. Read on for a great blondie recipe, plus three ways to adapt it to make it your own.

Ingredients:

  • ¾ cup of butter
  • 1 cup of light brown soft sugar
  • 1/5 cup of caster sugar
  • 3 eggs
  • ¾ cup of plain flour
  • ½ teaspoon of baking powder

Instructions:

  1. In a pan over low heat, melt the butter and both types of sugar. Remove from the heat and allow to cool.
  2. Beat the eggs into the butter and sugar mix, and then sieve in the flour and baking powder. Fold until you have a  smooth batter.
  3. Pour the batter into a lined and greased baking tray, and bake for 40 minutes in an oven heated to 350◦F.
  4. Leave the blondies to cool before serving.

Raspberry Ripple

Follow the recipe as above, but at the point that you add the eggs to the batter, add ½ cup of fresh raspberries and ¼ cup of white chocolate chips.

Peach Surprise

Follow the recipe as above, but at the point that you add the eggs to the batter, add ½ cup of fresh or tinned chopped peaches.

  1. Bring a pan of water to the boil. Peel any discolored parts of the potatoes off, and boil the potatoes for 6 – 7 minutes.
  2. Meanwhile, cut the broccoli heads into small pieces (including the stalks).
  3. Use 1 tablespoon of olive oil to coat the broccoli, and place the broccoli in a large roasting tin.
  4. Place the broccoli in an oven heated to 400 °F. Roast for 10 minutes.
  5. Finely slice the leeks, and use the remaining olive oil to fry them in a large frying pan, taking care that they don’t burn. Cook until they are soft.
  6. Drain the potatoes, and add them along with the tomato passata to the roasting broccoli. Roast for a further 5 minutes.
  7. Stir the stock cube into the boiling water until it dissolves. Add the stock to the roasting tin. Roast for a further 15 minutes.
  8. Add the leeks as a top layer over the rest of the vegetables, and top with the grated cheese. Roast for a further 3 minutes.
  9. Remove the tin from the oven and portion the vegetables out into servings. This dish goes great with a fresh green salad on the side.

If you’re hosting a dinner party, you may want dishes that are quite refined to bring out to impress your guests. However, if you’re hosting a large event where there will be lots of hungry guests, sometimes the most important thing isn’t that your food looks beautiful and impressive, but that there’s enough to go around to keep everyone happy. Enter, these seasoned fries—tasty, satisfying, and healthier than traditional fries, these are perfect alongside any kind of cooked fish or meat, as a starter, or even as the main event themselves—although if you’re serving them as a main, you may want to consider loading them with cheese, fried vegetables or other toppings.

Ingredients (to serve 12):

  • 11 cups of white potatoes, scrubbed and peeled of any marks and blemishes
  • 10 fl ounces of vegetable oil
  • Paper towels, for soaking up excess oil
  • 2 teaspoons of salt
  • 2 teaspoons of garlic granules
  • 2 teaspoons of smoked paprika
  • 2 teaspoons of oregano

Instructions:

  1. Mix all of the seasonings together.
  2. Slice the potatoes into rounds about half an inch thick. Try to make sure the slices are about the same size.
  3. Bring a pan of water to a boil, and boil the potato slices for 7 minutes.
  4. Drain the water from the pan, and leave the potatoes to steam off excess water for 1-2 minutes.
  5. In a large frying pan, heat 1/4 of the total amount of oil.
  6. Add 1/4 of the total amount of potato slices to the hot oil, making sure each slice is in contact with the oil.
  7. Fry for 1-2 minutes, and then sprinkle 1/4 of the total amount of seasoning over the potatoes.
  8. Fry for a further 4 – 5 minutes, and then flip the slices over using a fork or a spatula. Fry for a further 3-4 minutes.
  9. Carefully remove the slices from the pan, trying not to tip out too much of the oil. Place them on a plate or board lined with paper towels.
  10. Fry the remainder of the potato in batches, ensuring that every slice comes into contact with the oil to create a crispy finish.
  11. To serve the fries, heat them in a low oven for 10 minutes.

You can adjust the amount of sugar in the brownies if you’d prefer something a little less sweet.

Ingredients (to make 12):

  • 3/4 cup of plain flour
  • 1 1/2 cups of unsalted butter
  • 2 cups of chocolate
  • 2 tablespoons of cocoa powder
  • 3 large eggs
  • 1 1/2 cups of caster sugar

Instructions:

  1. Melt the butter and chocolate together in a bowl or pan. Leave aside to cool.
  2. Preheat the oven to 380° F.
  3. Line and grease a 10-inch x 10-inch baking tray.
  4. In a large mixing bowl, sift together the flour and the cocoa powder.
  5. In a separate bowl, whisk together the eggs and the sugar. The mixture should become pale and double in volume.
  6. Pour the chocolate mix into the eggs and sugar, folding gently with a spoon to mix them together.
  7. Sift in the flour and cocoa powder into the mix, folding this in with a spoon.
  8. Pour the mix into the lined tin, and bake for 25 minutes. The brownie is ready when the middle doesn’t wobble when the oven tray is shaken, it should have a glossy sheen on top. Allow to cool before serving.

Basque cheesecake is a great showstopper of a cake to bring out at birthdays, anniversaries and other special occasions. It’s a bit less rich than New York-style cheesecake, and it goes perfectly with some fresh berries on the side. It also pairs nicely with a small glass of sherry, as the dry, crumbly richness of the cake complements the syrupy sweetness of the drink very well. However you choose to serve it, this Basque cheesecake recipe never fails, so you don’t have to worry about split sides or an undercooked middle.

Ingredients:

  • 3 cups and 2 tablespoons of cream cheese
  • 1 cup and 2 tablespoons of caster sugar
  • 2 tablespoons of gluten-free flour
  • 3/4 cup of soured cream
  • 4 eggs
  • 2 teaspoons of vanilla

Instructions:

  1. Preheat the oven to 460 °F.
  2. Grease and line a deep 10-inch cake tin. Use plenty of parchment paper, it needs to come up and over the sides of the tin.
  3. Use a food mixer to whisk together the soft cheese and the sugar. Test it by rubbing a small amount between your fingers, if it feels grainy it needs more whisking.

Ingredients:

  • 3/4 cup of dried red lentils
  • 1 can of coconut milk
  • Half a white onion
  • 3 cloves of garlic
  • 1 thumb sized piece of ginger 
  • 2 tablespoons of oil
  • 1 teaspoon each of: garam masala, grind cumin, ground coriander and ground ginger
  • 1 vegetable stock cube 
  • 1/2 cup of water

Instructions:

  1. Finely dice the onion, slice the garlic cloves and peel and grate the ginger.
  2. Heat the oil in a large saucepan, and then add the onion, garlic and ginger.
  3. Cook for 10 minutes, and then add the ground spices. Stir well and cook for 2 minutes.
  4. Add the red lentils and stir well.
  5. Add the stock cube, cook for 1 minute and then add the water and coconut milk.
  6. Allow the soup to simmer for 10 – 15 minutes, then remove from the heat and serve.

Ingredients (to serve 4):

  • 3 large bell peppers
  • 4 cloves of garlic
  • 1 tin of butter beans
  • 1 onion

Instructions:

  1. Deseed and quarter the peppers, roughly smash the garlic cloves in a pestle and mortar. Halve the onions.

Blondies are very similar to brownies, just without the cocoa content. The lack of chocolate means you can experiment with a range of flavors and textures, and as delicious as brownies are sometimes it’s nice to try something a little different. Read on for a great blondie recipe, plus three ways to adapt it to make it your own.

Ingredients:

  • ¾ cup of butter
  • 1 cup of light brown soft sugar
  • 1/5 cup of caster sugar
  • 3 eggs
  • ¾ cup of plain flour
  • ½ teaspoon of baking powder

Instructions:

  1. In a pan over low heat, melt the butter and both types of sugar. Remove from the heat and allow to cool.
  2. Beat the eggs into the butter and sugar mix, and then sieve in the flour and baking powder. Fold until you have a  smooth batter.
  3. Pour the batter into a lined and greased baking tray, and bake for 40 minutes in an oven heated to 350◦F.
  4. Leave the blondies to cool before serving.

Raspberry Ripple

Follow the recipe as above, but at the point that you add the eggs to the batter, add ½ cup of fresh raspberries and ¼ cup of white chocolate chips.

Peach Surprise

Follow the recipe as above, but at the point that you add the eggs to the batter, add ½ cup of fresh or tinned chopped peaches.

Passion Fruit Twist

Follow the recipe as above, but at the point that you add the eggs to the batter, add ½ cup of fresh passion fruit flesh.
