Gluten-free is not exactly the newest crazy. People have been avoiding bread products because of bloating for years. But it was not until somewhat recently that gluten has been found to affect acne and depression.

Mainly the correlation between health problems and gluten products, with the exception of persons with celiac disease, is due to the generally processed nature of common bread and pasta products.

Multi-grain and gluten-free bread can be expensive though and oftentimes not delicious at all. An excellent, and affordable substitute for cheap processed pasta is absolutely zucchini noodles.

You can also make noodles from a variety of squash plants besides zucchini such as spaghetti squash, butternut squash and pretty much any autumn vegetable you can cut up into thin pieces.

Zucchini noodles can be topped with other vegetables, meat or sauces that you usually put on your traditional pasta dishes.

Just like a burrito, spring rolls are an excellent platform for exploring new flavor combinations. Not only are rolls portable but they are easy to make with others, especially if you are trying to balance your guest’s multiple dietary restrictions. Sort of like a build your own sandwich shop, if you are a host you can make an ingredients bar. This allows for your guests to have full control over what they eat and ultimately less work for you!

At your spring roll party, all you need to do is buy the ingredients and prep. It is strongly recommended having a lot of options for vegetables and filler because then your guests can get more creative with their rolls.

Staples for spring rolls include (but are not limited to) tofu, peeled shrimp cucumber, rice vermicelli, cabbage, lettuce, carrots, avocado, green onions, and sesame seeds as a garnish.

Before you fill the rice paper, there are a few things to prepare. Fill a large bowl with warm water. Dip one paper into the hot water for 1 second to soften.

There is a common misconception that the only thing that can be cooked in a crockpot is soup. Welcome to the world of hands-off cooking. Sometimes you feel like having a warm home-cooked meal but working the classic 9-5 day doesn’t make that possible, unless you want to eat at 10 PM. Not only does leaving your crock-pot on all day ensure that you have a finished meal waiting for you when you get home, but it also gives the dish time for the spices to mature and absorb.

Swedish cabbage rolls are an excellent complete meal to make for the whole family and leftovers can easily be reheated for future meals. 

Traditionally the recipe calls for ground beef but you can easily use a meat substitute such as Bob’s Mill Textured Vegetable Protein or Seitan Chorizo.  All of the ingredients for this dish are fairly inexpensive and truly delicious.

It’s not uncommon to be balancing about a million things in our daily lives. Whether you are a parent, student, full-time worker or all three, it can be hard to make your health and diet a priority. When you end up stranded between obligations and in a time crunch fast food or grocery store meals can sometimes feel like the only options. And if you are trying to save money, often times your ‘lunch’ ends up being a snack or protein bar.

Not only is meal prep an excellent way to make sure you are getting all the proper vitamins and protein, but often times prepped meals are less expensive than eating out even fast food. Summer is one of the best times to harvest fruit from your local garden or community farm. Often times in orchards or even yards with a single tree an overwhelming surplus of produce becomes ripe all at one time.

When all of your apples or berries get ripe at once, you have to start getting creative with what you make with all this fresh fruit, in order to avoid waste. Jams and jellies are great ways to preserve ripe fruit for later. But if you want to enjoy some produce now, the perfect pie for hot summertime days is rhubarb strawberry pie.

Rhubarb is a fairly tart root and so it produces a pie that is a little less overwhelmingly sweet than most desert pies. If you are not as much of a fan of tart you can easily balance the taste with strawberries or blueberries creating a perfect balance of tart and sweet. And on especially hot days the pie is perfect with a scoop of fresh vanilla ice cream on the side.

Since eggs are so popular they are also a great dish to bring to your local potluck or barbeque. In the U.S. deviled eggs are commonly made as a dish to share with many people and add a freshness in contrast with the hot barbeque. But if you are in London it may be more likely to bring scotch eggs to a cookout. Scotch eggs are hard-boiled eggs wrapped in sausage meat and deep friend.

While none of these dishes are especially healthy they do show the wide array of ways eggs are appreciated around the world. Be sure to try any of these styles of eggs you haven’t had before and spice up the common egg!
