A Twist on a Traditional Dish: Vegan Paprikash

Paprikash is a Hungarian dish, typically prepared with chicken, that’s considered comfort food. It is relatively quick and easy to make and the result is very satisfying. For this version, you replace the chicken with a vegan alternative or simply with some cauliflower sections. You can add a bit more smoked paprika if you really like the flavor.

Serve the Paprikash with rice, quinoa, mashed potatoes, or roasted root vegetables. Great for colder evenings at home.

Ingredients

  • 1 14 oz diced tomatoes
  • 1-½ Tbsp olive oil
  • 1.5 cups vegan chicken pieces alternative or cauliflower sections
  • ½ cup red pepper, finely chopped
  • 3 cloves garlic, peeled and finely chopped
  • ½ cup onions, finely chopped
  • 1 Tbsp smoked paprika
  • salt, pepper to taste

Instructions

  • Heat the oil in a casserole, add the chicken alternative or cauliflower sections. 
  • Season with the smoked paprika and fry for about 5 minutes.
  • Add the onion, garlic, and red pepper, leave to fry for another 5 minutes.
  • Throw in the tomatoes, salt, and pepper.
  • Reduce to medium heat and let simmer for an additional 5 minutes.
