A Tasty Three Ingredient Tomato Soup

A healthy soup with little ingredients that takes little time for prepare – is this the perfect recipe or what? Tomato soup is a healthy, tasty meal that’s perfect for lunch. Everyone loves it, including children. You can also combine it with garlic bread and grilled cheese sandwiches. This simple tomato soup is very tasty and will save you a lot of time. 

Ingredients 

  • 4 tablespoons unsalted butter 
  • 1/2 large onion, cut into large wedges 
  • 1 (28-ounce) can tomatoes 
  • 1 1/2 cups water, low sodium vegetable stock, or chicken stock 
  • 1/2 teaspoon fine sea salt 

Instructions

In a large saucepan, melt the butter on medium heat. Add the onion, some water and the can of tomatoes along with the juice and salt. When it starts to simmer, cook it for about 40 minutes uncovered, with occasional stirring. The soup doesn’t need to be smooth, so a texture is a good idea. You can add seasoning by taste. You can also use a blender to achieve the texture that you like. 

You can also use fresh tomatoes and for this you will need 10-12 whole tomatoes. You can use them peeled or unpeeled; the choice is up to you.
