A Japanese Brewery is Using AI to Perfectly Pair Sake to Fish

Just in case you needed a reminder that we’re living in the future, a Japanese brewery is using technology to benefit your tastebuds. Over the years, artificial intelligence has wiggled its way into a variety of areas, from self-driving vehicles to writing essays and shopping online. And now, AI would like to help you decide what to drink.

A Japanese sake brewery that has been around since 1689 is using technology to create versions of the beverage that perfectly complement different varieties of fish.

According to reports, the Fukushima fishing industry has suffered a major setback following a nuclear accident caused by an earthquake in 2011. The government’s plan to release fish that had been treated for radioactivity back into the sea has caused concerned citizens to stay away from eating the aquatic animals.

As a result, the Suzuki Shuzoten brewery has come up with a plan to help local fisherman.

By using sensor technology specially designed by a taste analysis and research firm in Tokyo called Aissy, Suzuki has been able to determine the flavor profile of fish. Based on the level of sweet, salty, sour, bitter, or umami, the brewery then creates sake that pairs perfectly. 

Suzuki has already developed sakes that balance out eight fish, with another eight expected in 2023.
