A Cheese Frenchee Will Be Your New Favorite Way to Make a Grilled Cheese

With all due respect to the people of Nebraska, the state isn’t usually considered a culinary destination. And yet, the landlocked state is the unusual home where you will find a very interesting sandwich.

Dubbed the Cheese Frenchee, it involves taking a classic grilled cheese and deep-frying it. Did someone say double crunch?

Ingredients:

  • 2 slices thick-sliced bread
  • 2-3 slices cheddar cheese
  • 4 teaspoons mayonnaise
  • 1 large egg, beaten
  • ½ cup milk
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • 1 cup cornflakes, crushed
  • Canola or vegetable oil, for frying

Instructions:

  1. Spread 2 teaspoons of mayonnaise on one side of each slice of bread. Then, on one piece of bread, place a slice of cheese on top of the mayonnaise. Top with the other slice of bread to make a sandwich.
  2. Using a sharp knife, trim the crusts off the sandwich on all sides. Then, cut in half diagonally so you have two triangle-shaped halves and set aside.
  3. Fill a deep fryer or Dutch oven with 2-3 inches of oil and preheat to 350°F. 
  4. While the oil preheats, whisk together the egg, flour, milk, and salt to form a smooth batter. If the batter seems too heavy, add more milk, one tablespoon at a time. Place the crushed cornflakes into another bowl.
  5. Dip one sandwich triangle into the batter, evenly coating all sides. Then, dredge the batter-covered sandwich in the cornflakes, pressing the crumbs gently onto all sides of the sandwich.
  6. Place the sandwich into the hot oil, one triangle at a time. Deep fry the sandwich for 3-4 minutes until it is golden and crisp on all sides. Remove from the oil and transfer to a wire cooling rack over a baking sheet to cool. Repeat with the second half of the sandwich.
