Egg salad—some people love it while others can’t stand it. We happen to love it, especially when it’s homemade. While classic egg salads use just eggs, mayonnaise, and some seasonings, there are ways to really make egg salad shine. You haven’t had egg salads quite like these before and if you’re not a fan of the dish, maybe these versions will convert you.

Keep it Chunky

It’s easy to mash the eggs too much, but you want to keep them a bit chunky, so they’ll still have some texture.

Add Crunch

In addition to keeping the eggs chunky, add more texture to the dish by adding celery, capers, red onion, or pickles.

Go Light on the Mayo

Many egg salads have way too much mayonnaise, so go easy on it. If you don’t like mayo, you can substitute it for Greek yogurt, mashed avocados, or sour cream.

Add Acid

Give your egg salad a kick with mustards, fresh lemon juice, pickle juice, or red wine vinegar.

Go Heavy on the Herbs

Parsley, dill, basil, and chives are great additions to egg salad and they’ll make it taste fresh while giving it a pop of color.
