3 Ways to Use Leftover Chicken That Isn’t Salad

Buying a rotisserie chicken seems like an excellent idea when the scent of crisp chicken wafts towards you in the supermarket. You take it home, cut it up, eat it for dinner, and repeat the next day. At some point you realise that there are still mounds and mounds of poultry left over. Sure, you could eat it the same way… or you could give it new purpose with these recipes. 

Chicken Tetrazzini

Not as popular as its pasta counterparts, chicken tetrazzini is an Italian dish that is perfect to feed the entire family. Combine leftover rotisserie chicken with linguine, mushrooms, peas, and cheese, and let it bake until golden.

Chicken Soup

What’s great about this soup is that it doesn’t let a thing go to waste. It uses the carcass and the meat, making sure that the soup is packed with flavor. Use the bones to make a broth, shred the chicken, and add in any veggies and aromatics you like.

Nachos

You could, in theory, put anything on nachos, so why not leftover chicken? Load your nacho chips with shredded rotisserie chicken, re-fried beans, jalapeños, cilantro, and lots of cheese! Don’t forget the guacamole and salsa.
