Vegetarian sandwiches are a great summer food. They are easy to make, delicious, refreshing, and won’t sit heavy on the stomach during hot days. This is why we decided to let you in on our favorite vegetarian sandwiches, so we can all munch together. Let’s check them out.

Hummus Sandwich

If you are looking for a vegetarian sandwich that will keep you full, then a hummus sandwich is the way to go. Take one slice of bread and spread some hummus on it. Top it with some tomatoes, avocado, cucumbers, or any other veggies that you enjoy. Spread hummus on another slice of bread, top the stack and enjoy.

Cream Cheese and Cucumber Sandwich

This is one of the simplest and fastest vegetarian sandwiches you can make. All you need is two slices of white bread, one cucumber, and some cream cheese.

Remove the crust from the slices and generously cover them with cream cheese. Peel the cucumber on thin slices, salt them a bit, and then neatly stack them between the bread. Cut to rectangles for better presentation.

You can also make this sandwich without cream cheese, but in that case, you’ll need to butter the bread, so the cucumber juice doesn’t soak it too soon.

Caprese Sandwich

Caprese salad is a popular Italian salad that consists out of mozzarella cheese, tomatoes, and basil. But these simple ingredients also work well together as a sandwich.

Take two slices of bread and brush them with some olive oil. If you want some extra crunch, you can toast them before assembling the sandwich. Then layer evenly with basil, slices of tomatoes, and slices of mozzarella in that order. Dig in.
