Spinach, Eggplant and Chickpea Curry
Simply make a spinach puree in a food processor, and stir-fry onions, chickpeas, garlic, chili and spices for five minutes over a medium heat. Then add eggplants and fry for another 10 minutes until eggplant is colored. Add tomatoes and salt. Simmer for 15 minutes before stirring in the spinach puree to serve.
This curry is rich in protein, vitamins and minerals.
Slow-Cooked Dahl
Cook split peas, onion, tomatoes, ginger, ground cumin, turmeric, crushed garlic, curry leaves and stock on high for 4 hours in a slow cooker. Season generously with salt and freshly ground pepper. Just before you serve your dahl, fry cumin seeds and sliced garlic in very hot oil until the cumin smells smoky. Pour the spiced oil over the dahl, sprinkle green chili and serve with lemon wedges.
Carrot and Sweetcorn Bargees
For an excellent vegan curry side-dish, make up a mixture of carrots, sweetcorn, gram flour, spring onions, ginger, chili, seeds, garam masala, a good pinch of salt and lots of pepper. When the mixture has stood for 5 minutes, fry up handfuls of it over a medium heat for around 3 minutes. Serve with coconut yogurt and mint leaves.
