Peeling boiled eggs sure seems a lot harder than it needs to be. No matter how patient and careful we are, it appears that we rarely succeed in getting the entire eggshell off without ruining the egg’s perfect shape. Luckily, there are several ways you can make your peeling routine a lot more successful and they all start with the boiling process.

Never Boil Eggs Straight From the Fridge

If you take out the eggs from the fridge and immediately start boiling them, chances are you’ll have a hard time peeling them. According to Mashed, throwing a cold egg into boiling water causes a reaction inside the egg that makes egg whites stick to the inner part of the shell. Instead, leave eggs at room temperature for at least 15 minutes before boiling them, and you’ll get much better peeling results.

Always Get the Water Boiling First

If you want an easier peel, Bon Appetit recommends waiting for the water to start boiling before adding them to the pot. Of course, you want to be careful not to burn yourself or crack the eggs. This is why you should use a spoon to gently submerge the eggs instead of throwing them in by hand.

Don’t Use Fresh Eggs

It may surprise you, but you should avoid boiling fresh eggs if you want an easy peel. Older eggs (preferably two weeks old) are a much better choice for boiling because their egg white gets shrunk a bit. This leaves more space between the egg and the shell, making them easier to peel.
