Not only is quinoa a quick and easy grain to prepare, it’s also incredibly healthy with a high amount of fiber, protein, and other essential minerals. Instead of eating it as a simple side, a great option can be using it as a base for your salads.

Mediterranean Quinoa Salad

For this salad, simply mix your cooked quinoa with cucumbers, cherry tomatoes, olives, feta cheese, red onion, and parsley. Whisk together some olive oil, red wine vinegar, dried oregano, salt, and black pepper to use as a dressing. This salad is fresh, filling, and satisfying. 

Southwest Quinoa Salad

In a large bowl, combine cooked quinoa, black beans, corn, red bell pepper, red onion, and cilantro. For a dressing, use a combination of lime juice, olive oil, chili powder, cumin, salt, and black pepper. As a finishing touch, gently mix in some diced avocado. This salad will make a great lunch or dinner. 

Asian Sesame Quinoa Salad

Mix together your cooked quinoa, edamame, red bell pepper, purple cabbage, carrots, some green onions, and cilantro. For the dressing, mix some soy sauce, rice vinegar, sesame oil, honey, and minced ginger. Drizzle the dressing over the quinoa salad and sprinkle some sesame seeds on top for a finishing touch. Yum!
