Smoked Salmon Tortilla
After lining a 22cm dish with baking parchment, add seasoned beaten eggs to 300g cooked potatoes, smoked salmon, pesto and peppers and mix together. Place the mix into the lined baking tray and cook for 30 minutes. Serve with fresh salad.
Potted Salmon Rillette
Blend 100g cream cheese, 50g smoked salmon, 2 teaspoons horseradish and some lemon juice in a food processor. Puree until smooth. Fold in another 50g salmon and chill for at least 2 hours. Serve in small pots with toast.
Smoked Salmon and Quail’s Egg
Hard boil 6 quail eggs and cut 400g smoked salmon into small slices. Spread crunchy baguettes with mayonnaise, add half a quail’s egg and 2 slivers of anchovy. Skewer with a cocktail stick to hold it together and season with salt and black pepper. The quail eggs are particularly nice if the yoke is still creamy.
