You’ve Got to Try This Tofu Mushroom Pasta

If you’re a vegan looking for a recipe that is easy to make, has plenty of protein, tastes great, can easily be made in large quantities for family dinners or dinner parties, and doesn’t require too many fancy kitchen skills or crazy ingredients, look no further than this tofu mushroom pasta. Here’s how to make it.

Ingredients

  • Olive oil
  • Onion
  • Firm tofu
  • Mushrooms
  • Cherry tomatoes
  • Pasta (we recommend a short pasta like farfalle or penne)
  • Water
  • Salt
  • Pepper
  • Garlic salt

Directions

Generously salt your water and boil it. Cook your pasta according to package instructions. Chop your onions, tofu, and mushrooms into small pieces. Heat olive oil over medium heat. When it’s shimmering, add the onions and cook until they are soft and translucent.

Once the onions are cooked, add the tofu and cook for 10-15 minutes until it’s warmed through. Add the chopped mushrooms. Cook for an additional 5-10 minutes until they reduce. Take the tofu, mushroom, and onion mixture off the heat. Season with salt, pepper, and garlic salt. Mix thoroughly to combine and add halved cherry tomatoes.

Drain the pasta and add it into the tofu mixture. Mix to combine. Add a splash of olive oil and mix until everything is thoroughly coated. Serve, optionally sprinkling with nutritional yeast.
