You’ve Got to Try This Sweet Potato Tofu Salad

Let’s be honest, lots of salads are super boring. Without enough flavors, textures, and satiating ingredients, salads can be anemic and not that exciting to eat.

This sweet potato tofu salad is not one of those boring salads. It tastes great, with lots of flavor, has both fresh and cooked veggies for lots of nutrition, has enough protein to keep you going through the day, and is made with simple ingredients that you probably already have sitting around at home. Ingredients

  • Vegetable oil
  • Firm tofu
  • Soy sauce
  • Sesame oil
  • Sweet potato
  • Salt
  • Pepper
  • Olive oil
  • Cucumber
  • Tomato
  • Lemon juice
  • Garlic dressing
  • Croutons

Directions

The first step is to preheat your oven to 350. Cut your sweet potatoes up into bite-sized pieces. Line a baking pan with parchment paper and spread the diced sweet potato out evenly. Drizzle with olive oil and season with salt and pepper. Bake until the sweet potatoes are golden brown.

Heat up vegetable oil in a pan over medium heat. Chop tofu into bite-sized cubes and add to the pan. Cook until crisp on all sides. In a small bowl, combine soy sauce and sesame oil, mixing to combine. Add to the tofu, mix, and let cook a bit longer.

In a large bowl, mix up diced cucumbers and tomatoes with garlic dressing, croutons, and lemon juice. Once the tofu and sweet potato are ready and cool, add them to the large bowl and combine everything.
