While it may not seem like the most obvious or natural thing to grill fruit, it’s actually a summer favorite and for many reasons. Not only does grilling change the fruit’s texture, but it brings out its sweetness and lends it an interesting smoky flavor that contrasts with the sugars.

So this summer, when you’re breaking out the grill for your steaks, kebabs, and corn on the cobs, try this grilled watermelon recipe, too. You’ll probably love it.

Ingredients:

  • Lime
  • Honey
  • Olive oil
  • Watermelon
  • Mint leaves
  • Sea salt

Directions:

Heat up a grill to medium heat. If you don’t have a grill, you can use a grill pan. In a medium-sized bowl, combine the juice and zest of a lime, honey, and olive oil. Whisk together.

Cut your watermelon into wedges or cubes according to your preference. Brush the liquid mixture all over the watermelon. Place the watermelon on the grill. Cook until the watermelon gets grill marks and the fruit softens. It should take about two minutes per side. Serve the watermelon with torn mint leaves and flaky sea salt sprinkled over top. Enjoy!
