Vegan Chocolate Chip Cookies Without Flour

Chocolate chip cookies are the ultimate comfort food for any occasion. These cookies are always there for you, through the good and the bad, and being vegan doesn’t mean you should give up on them. We’re giving you a chocolate chip recipe that’s healthy, vegan, and most importantly, delicious! And they’re made out of chickpeas too!

Ingredients

  • 400 grams cooked chickpeas
  • 1\2 cup of natural peanut butter
  • 1\3 cup of maple syrup
  • 1\2 teaspoon kosher salt
  • 1\2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 3\4 cup of chocolate chip (of your choice)

Directions

The first step is to preheat your oven to 350 degrees F. This recipe is quick and easy, so your oven needs to heat up early on.

Grab your blender, and let’s get this chocolate chip cookie party started. Toss into the blender your chickpeas, peanut butter, maple syrup, kosher salt, baking soda, vanilla extract, and 1\4 cup of your chocolate chips. Mix them all until you get a finely smooth texture.

Next, take parchment paper and place it on a tray big enough for about 12-16 medium-size cookies. Once you have your smooth chocolate chip batter, transfer it to a bowl, and mix in the remaining chocolate chips.

Use a clean spoon to scoop portions of the batter and gently rest them on the parchment paper. Make sure there is about a finger’s distance between each cookie. Do this until you run out of batter.

Put your cookies in the oven for 20 minutes. When the time is up, take them out and let them cool for 10 minutes. Enjoy!
