Use Up Old Vegetables With This Rosti Recipe

If you have a few old carrots, parsnips and onions hanging around in the fridge, use them up in this delicious rosti recipe. Simple to make and cook, serve up your rostis with a fresh green salad, a soup, or even an indulgent gravy and mashed potato for a really comforting weekend supper. The best part is, these rostis can be made using any vegetables, so if you need to swap in a leek for the onions or a squash for the carrots, go ahead.

Ingredients (to serve 4):

  1. 1 1/2 cups of grated mixed vegetables, such as carrots, leeks, parsnips, onions, or squash
  2. 3 eggs
  3. 2 tablespoons of oil
  4. 3 tablespoons of grated cheese
  5. 1 teaspoon of salt
  6. 1 teaspoon of pepper
  7. 1 teaspoon of cinnamon
  8. 3 tablespoons of plain flour

Instructions:

  1. Heat the oil in a pan.
  2. Mix the egg, cheese, salt, pepper and cinnamon through the mixed vegetables.
  3. Mix the flour through, then loosely shape the mix into palm-sized balls or patties.
  4. Fry 2 – 3 rostis in the pan at a time, making sure both sides are browned and crisped.
  5. Serve immediately.

Another excellent twist on this recipe is to add a few pieces of cooked bacon or ham to the mix, or even some tinned fish such as mackerel or sardines.
