This dish has cauliflower at its center and is an absolutely delicious recipe to warm you up this winter. It goes great with couscous, but you can also have it with quinoa.

Ingredients:

  • 1 large cauliflower
  • 1 red onion
  • 6 cloves of garlic
  • 3 medium tomatoes
  • Juice of half a lemon
  • 1 tablespoon of olive oil
  • 1 teaspoon of smoked paprika
  • 8 ounces of feta cheese (optional)
  • 10 ounces of couscous or quinoa
  • Salt
  • Black pepper

Instructions:

  1. Turn your oven on and put on a medium-high heat. Chop up your cauliflower into small chunks and place in a baking tray with a pinch of salt and your olive oil. Leave to cook for about 15 minutes.
  2. Chop up your onions, garlic, and tomatoes. Once your cauliflower has started to cook and soften, add your onions and tomatoes. Garlic can go in a bit later, especially if it is finely chopped or crushed.
  3. Once you have added all your vegetables, you can squeeze the lemon juice over your vegetables and add your smoked paprika, and a pinch more salt. The cauliflower will need around 40 minutes in total to cook.
  4. Once your vegetables are cooked, you can boil some couscous or quinoa. This dish pairs well with feta cheese, but you can have it with hummus if you want to keep it vegan. Once your grains are cooked you are ready to serve, just add black pepper and salt to taste!
