Try This Deliciously Nutritious Spinach and Red Lentil Dhal

Dhal is one of the best comfort foods out there and can be made simply and quickly as a side or as a main. Add lots of spinach to this recipe for a healthy and vegan dish that everyone can enjoy.

Ingredients:

  • 2 white onions
  • 4 bulbs of garlic
  • 1 teaspoon garam masala
  • 1 teaspoon of cumin
  • 1 teaspoon of ground ginger
  • ½ teaspoon of turmeric
  • ½ teaspoon of chili flakes
  • 4 medium tomatoes
  • 8oz fresh spinach
  • 12oz red lentils

Instructions:

  1. Chop the onions into crescent shapes and fry on medium heat for five minutes. Add chopped garlic and cumin, ginger, and chili. Add a pinch of salt.
  2. Add lentils to the pan and enough water to stop them from sticking. Add turmeric and garam masala. Chop tomatoes and add. Keep adding water as the lentils cook, which should be 15-20 minutes.
  3. Add spinach and stir until wilted. Add more salt to taste. Serve with rice or bread as desired.
