Ingredients:
- 1 pound of fresh broccoli
- 1 onion
- 4 cloves of garlic
- 2 tablespoons olive oil
- 4 cups of vegetable broth
- 1 medium potato
- 1 cup of unsweetened almond milk (or any plant-based milk)
- Salt
- Black pepper
Instructions:
- In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Add minced garlic and continue to sauté for an additional minute until fragrant.
