Try This Amazing Broccoli Soup

Warm up with a bowl of broccoli soup, a comforting blend of velvety smoothness and earthy broccoli flavor. This easy-to-make soup is not only delicious but also a nutritious way to enjoy the wholesome goodness of broccoli.

Ingredients:

  • 1 pound of fresh broccoli
  • 1 onion
  • 4 cloves of garlic
  • 2 tablespoons olive oil
  • 4 cups of vegetable broth
  • 1 medium potato
  • 1 cup of unsweetened almond milk (or any plant-based milk)
  • Salt
  • Black pepper

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Add minced garlic and continue to sauté for an additional minute until fragrant.
  2. Toss in the chopped broccoli and diced potatoes, stirring to coat them in the onion-garlic mixture. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat, cover, and simmer for about 15-20 minutes, or until the vegetables are tender.
  3. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth. Stir in the almond milk and season with salt and pepper to taste. Simmer for an additional 5 minutes to heat through.
  4. Serve your soup hot, garnished with your choice of toppings. Enjoy!
