Try These Leek and Cheddar Bites

Ingredients:

  • 2 leeks
  • 1 tablespoon butter or olive oil
  • 1 cup of grated cheddar cheese
  • 1/2 cup of breadcrumbs
  • 2 eggs
  • Salt
  • Black pepper
  • Optionally: chopped fresh herbs such as parsley or chives for garnish

Instructions:

  1. In a skillet, melt the butter or heat the olive oil over medium heat. Add the thinly sliced leeks and sauté until softened and lightly caramelized, about 5-7 minutes. Remove from heat and let cool slightly.
  2. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
