Try These Easy Light Dinner Options

We all have days when dinner time seems less appealing than normal. Whether it’s because you’ve feasted at lunchtime, are feeling a little under the weather, or simply don’t feel as hungry as normal, here are three options of dinners that are on the table in under five minutes and won’t leave you feeling stuffed.

Watermelon and Feta Salad

Ingredients:

  • 1 cup of diced watermelon
  • 1/2 cup of cubed feta
  • 6 small tomatoes
  • 1/4 cup mixed seeds
  • 1 tablespoon of olive oil
  • 1 teaspoon red wine vinegar
  • 1 flatbread

Instructions:

Mix the oil and vinegar together to create a dressing. Slice the tomatoes, and mix them in a bowl with the watermelon, feta, and seeds. Dress with the oil and vinegar and serve with the flatbread.

Vegetable Cous Cous

Ingredients:

  • 1/4 cup of couscous
  • 1/2 zucchini
  • 1 large tomato
  • 1/4 cup of olives
  • 1 tablespoon of olive oil
  • Pinch of salt

Instructions:

In a saucepan, bring 1/2 cup of water to the boil. Add the cous cous, and the sliced zucchini and tomato. Cook for 5 – 10 minutes, until the cous cous has absorbed the water and the zucchini has softened. Add the olives, salt, and olive oil.

Caprese Burger

Ingredients:

  • 1 burger bun
  • 1 large tomato
  • 1/2 ball of mozzarella
  • 1 small bunch of basil
  • Salt

Instructions:

Slice the tomatoes and mozzarella into rounds. Slice the burger bun in half, and drizzle with olive oil. Put the tomato and mozzarella into the burger bun, sprinkle with salt, and serve.
