Almost nothing beats homemade buttery soft pretzels! Except these VEGAN CHEESY THYME PRETZELS. They are SO GOOD! My kids even had a fight over the last piece. Haha. Pretzels are a huge favorite in our family. We love them as a snack or for breakfast, or for lunch, or for dinner……. 🌱 The RECIPE 🌱Vegan cheesy thyme pretzels (yield 4 pretzels) ⏺Ingredients •1 LB / 454 g of all-purpose flour •1 teaspoon salt •1 package / 7 g dry yeast •3 tablespoons / 40 g soft vegan butter, room temperature •1 cup / 240 ml warm water •4 tablespoons baking soda •6 sprigs of thyme •4 ounces / 110 g vegan cheddar style cheese (I used @violife_foods) ⏺Instructions 1️⃣Combine flour, salt and yeast. Add the soft vegan butter and the warm water. Knead the dough by hand until it's smooth.  2️⃣Place the dough in a bowl and allow it to rise for 60 minutes or overnight in the fridge. 3️⃣Bring 70 ounces / 2 liters of water to boil and add 4 tablespoons of baking soda.  4️⃣Preheat oven to 410 degrees F / 220 C°. Line baking tray with parchment paper. 5️⃣Transfer the dough to a lightly greased work surface. Add thyme leaves and diced vegan cheddar cheese. Knead by hand until everything is well combined. Divide dough into 4 equal pieces. Roll them lengthwise and make a pretzel.  6️⃣Boil one pretzel at a time for about 1/2 minute. Then transfer to the baking tray. Sprinkle them with coarse sea salt, if desired. 7️⃣Bake for 20 minutes until golden brown. Allow to cool just a little.   • 1 pound all-purpose flour
  • 1 teaspoon salt
  • 1 package dry yeast
  • 3 tablespoons soft vegan butter
  • 1 cup warm water
  • 4 tablespoons baking soda
  • 6 sprigs of thyme

  3. Preheat oven to 220 C° and prepare the baking tray with parchment paper.

  5. Place the dough onto a lightly greased surface. Add thyme leaves and diced vegan cheddar cheese and knead until the dough is smooth.
  6. Divide the dough into 4 equal pieces and make 4 pretzels.
  7. Boil each pretzel for about 1/2 minute, transfer to the baking tray and sprinkle with coarse sea salt.
