Ingredients:

  • 1/4 pound shrimps
  • 2 10-inch tortillas
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 medium yellow onion
  • 1/2 bell pepper
  • 2 tablespoons butter
  • 1 1/2 cups shredded Monterey Jack cheese
  • Salt to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and allow to cook, stirring regularly for 6 minutes.
  2. Add the shrimp and cumin, paprika, onion powder, and garlic powder to the skillet. Sprinkle salt according to taste. Cook until the shrimp is pink, for about 4 minutes. Place the mixture in a bowl and set aside.
  3. Add one tablespoon of butter to the now-empty skillet.
  4. Add a tortilla to the skillet and sprinkle about half the cheese onto the tortilla. Place the shrimp mixture on top and then add the remaining cheese. Top it off with the second tortilla and spread the remaining butter onto the outside of the top tortilla.
  5. Cook for about 3 minutes, until the bottom is golden and crispy, before flipping and cooking the other side.
