Three Stir Fry Recipes To Try Mid Week

Everyone knows that around Wednesday, energy dips and motivation to cook dinner really drops. Although ordering takeaway is always an option, if you want to save money and eat healthy, why not try one of these simple stir fry recipes? Dinner will be on your plate in less than fifteen minutes.

Mushroom, Green Pepper and Cashew

Ingredients (to serve 4):

  • 1 cup of fresh mushrooms
  • 1 green bell pepper
  • 1/3 cup of cashew nuts
  • 2 teaspoons of soy sauce
  • 4 noodle nests
  • Small piece of ginger
  • Small piece of red chilli
  • 1 garlic clove
  • Oil

Instructions:

  1. Heat the oil in a wok (or large based frying pan) and add the sliced garlic, ginger and chilli. Fry for 1 minute.
  2. Add the sliced bell pepper and mushrooms to the pan, stir well. After 2 minutes, add the soy sauce.
  3. In the last moments of frying, add the cashew nuts to the pan.
  4. Cook the noodles according to packet instructions, and then stir them through the pan before serving.

Zucchini and Chili

Ingredients (to serve 4):

  • 2 small zucchini
  • 1 red chilli
  • Small piece of ginger
  • 2 garlic cloves
  • Oil
  • 4 noodle nests
  • ½ cup of firm tofu, cubed
  • 2 teaspoons of soy sauce

Instructions:

  1. Heat the oil in a pan and add the sliced chilli, garlic and ginger, cook for 1 minute.
  2. Add the sliced zucchini to the pan, after 1 minute add the cubed tofu and the soy sauce.
  3. Cook for 5 minutes, as the vegetables are frying cook the noodle nests according to packet instructions.
  4. Stir the noodles through the pan and then serve.

Chicken, Honey and Cashew

Ingredients (to serve 4):

  • 4 chicken breasts or thighs
  • 2 tablespoons of honey
  • 1/3 cup of cashews
  • ½ cup shredded greens (such as cabbage)
  • 2 teaspoons of soy sauce
  • 4 noodle nests
  • Oil

Instructions:

  1. Sear the chicken in a pan, and then roast in an oven heated to 350 °F for 15 minutes, until cooked through. Allow it to cool, and then pull the meat into pieces.
  2. Heat the oil in a pan and add the shredded greens, honey and soy sauce. Cook for 1 minute before adding the chicken pieces and cashew nuts.
  3. Cook the noodles according to packet instructions, and then stir the noodles through the frying pan and serve.
