This Single-Serving Stuffed Apple Recipe is the Perfect Seasonal Treat

The best part of fall is all of the seasonal activities that it brings. We love apple picking in particular, and if you’re like us, you may have quite a few apples to put to use. We created this healthy take on apple pie with simple ingredients so that you can enjoy it in under 30 minutes! Whether or not you’ve been to an orchard, there’s a good chance you’ll find freshly picked apples at a market near you. Follow the recipe as-is for a single serving, but it can also be multiplied to serve with any holiday meals you may be planning!

Ingredients:

  • Two apples
  • 1 tablespoon maple syrup
  • 1 tablespoon coconut oil
  • ¼ teaspoon fresh-squeezed lemon juice
  • ¼ teaspoon cinnamon

Instructions:

  • Preheat oven to 400 degrees, and a toaster oven will also work as this recipe is for one
  • Slice the top off of one of the apples and hollow out the center with a spoon
  • Peel and chop the other apple into bite-sized pieces and place in a medium bowl
  • Mix maple syrup, coconut oil, lemon juice, and cinnamon in a small bowl
  • Pour mixture over chopped apple pieces and stir to coat
  • Fill the hollowed-out apple with prepared mixture
  • Bake for 10 minutes
  • Remove and enjoy! We suggest topping with your favorite vanilla ice cream
