This Guy Invented a Brand New Pasta Shape That’s Supposed to Be Perfect

Do you ever come across a food that makes you think about how it was first invented? There are plenty of things people came up with that once didn’t exist and we can’t imagine our lives without them today, and pasta is among them. The Sporkful podcast host Dan Pashman wasn’t truly satisfied with any pasta shape on the market, so he decided to invent a new one. He came up with cascatelli, a pasta shape he claims is perfect.

Pashman spent three years developing cascatelli. He calls the project Mission: ImPASTAble, and it involved trying and studying many different pasta shapes in order to create a perfect one yet. Cascatelli has “attributes from different shapes that he especially likes that have never been brought together in this way before,” as he told NPR Morning Edition.

It excels in three categories: “sauceability”, or how well it holds sauce, “formability”, its ability to be grabbed with a fork, and “toothsinkability”, which Pashman describes as how satisfying it is to bite it. Checking these boxes makes this new pasta shape superior and we can’t wait to try it.
