This French Onion Soup Will Keep You Warm All Winter Long

Soups are our go-to when it comes to winter meals—they’re super filling and they’ll warm you up. One of our favorites is French onion and this recipe doesn’t disappoint. It’s creamy, cheesy, and savory. What more could you ask for in a soup? This soup is ready in under an hour and it serves four to six people.

Ingredients:

Soup:

  • 5 cups onions, thinly sliced
  • 6 tablespoons butter
  • 4 cups water
  • 1 tablespoon white wine
  • 1/2 tablespoon dry mustard
  • Dash of thyme
  • Few dashes of white pepper
  • 1-2 tablespoons salt
  • 2 cloves garlic
  • 1 tablespoon honey
  • 1 tablespoon Tamari

Toppings:

  • Baguette, sliced into 1-inch thick pieces
  • Grated cheese

Instructions:

  1. Lightly salt the onions and garlic and cook them with the butter in a large pot on medium heat until they start to brown.
  2. Add mustard and thyme to the onions and garlic mixture.
  3. Add the remaining soup ingredients to the pot and simmer on medium-low heat, covered for at least 30 minutes.
  4. While the soup is simmering, preheat the oven to 400 F and put the baguette slices on a parchment-lined baking sheet, and bake them for 6-8 minutes, until the bread is slightly toasted.
  5. Season the soup to taste with more salt and pepper if needed.
  6. Once finished, serve the soup in bowls and top each one with baguette pieces and grated cheese.
