This DIY Peanut Butter Cup Recipe is Vegan—Yay!

Peanut butter cups are an eternally delightful dessert, with the perfect combination of salty and sweet in the peanut butter and chocolate mix and a great, bite-sized, easily edible shape. If you’re a vegan, you’ll probably love making your own with this delicious recipe. Plus, it doesn’t even have a lot of ingredients.

Ingredients

  • Peanut butter
  • Your sweetener of choice, like agave or simple syrup
  • Salt
  • Chocolate chips

Directions

Stir together your peanut butter of choice with a sweetener. A smooth peanut butter will work better than a chunky one, but it’s up to your personal preference. If your peanut butter is already sweet, or you simply prefer your desserts not too sweet, you can skip the sweetener.

You can also stir in some kind of mix-in to keep the texture of the peanut butter cup more interesting, like crisped rice, chia seeds, granola, or cocoa nibs.

Melt your chocolate chips in the microwave thirty seconds at a time, stirring in the intervals, until the chocolate is completely liquid. Spread the melted chocolate chips on the sides of mini cupcake liners. Freeze them until the chocolate solidifies.

Add peanut butter until the cupcake liners are full and cover with more melted chocolate chips. Freeze to set.
