This Coffee Cake is a Perfect Sweet Treat

Coffee cake: the name itself conjures up images of cozy mornings, warm kitchens, and the promise of a delicious sweet treat. This cake is perfect for breakfast, brunch, or an afternoon pick-me-up alongside a cup of coffee or tea. Let’s jump into this scrumptious recipe. 

Ingredients:

Cake:

  • 2 ¼ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

Crumb Topping:

  • ½ cup unsalted butter, cold and cubed
  • ¾ cup  packed light brown sugar
  • ½ cup all-purpose flour
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F and prepare a 9×13 inch pan with grease and parchment paper. 
  2. Whisk flour, baking powder, baking soda, and salt in a bowl. 
  3. In another bowl, cream butter and sugar with an electric mixer until fluffy, about 3 minutes, then beat in eggs and vanilla. 
  4. Mix in sour cream, then gradually blend in dry ingredients without overmixing. 
  5. For the topping, mix cold butter, brown sugar, flour, and cinnamon until crumbly. 
  6. Spread the batter in the pan, top with crumble, and bake for 45-50 minutes. 
  7. Cool for 20 minutes before serving. Enjoy with coffee or tea.
