This Chicken Pasta Recipe is Hard to Beat

  • 8 oz pasta of your choice (such as spaghetti, penne, or fettuccine)
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried Italian herbs (such as oregano, basil, and thyme)
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside. Season the chicken pieces with salt and pepper.
