The combination of chicken, mushrooms, cream, and tarragon is seriously dreamy, and this dish is surprisingly easy to make. Serve alongside roast potatoes or rice for a hearty, comforting dinner.
Ingredients (to serve 4):
- 4 chicken breasts
- 1 ½ cups of cream
- 1 cup of water
- 1 cup of mixed mushrooms
- 3 sprigs of fresh tarragon
- 1 teaspoon of salt
- 1 teaspoon of ground black pepper
- 2 tablespoons of olive oil
Instructions:
- Heat one tablespoon of oil in a wide-based saucepan and sear the chicken breasts on all sides. Set aside on some kitchen towel to drain off the oil.
- Wipe out the pan, and then heat the second tablespoon of oil. Add the sliced mushrooms to the pan, and cook until they release their water. Drain this into a cup.
- Add the cream and water to the pan, as well as the tarragon and the salt and pepper.
- Slice the chicken into pieces and add this to the mix. Cook on a medium heat for 15-20 minutes, then serve.
