This Chicken and Tarragon Stew is an Ideal Weekend Dinner

The combination of chicken, mushrooms, cream, and tarragon is seriously dreamy, and this dish is surprisingly easy to make. Serve alongside roast potatoes or rice for a hearty, comforting dinner.

Ingredients (to serve 4):

  • 4 chicken breasts
  • 1 ½ cups of cream
  • 1 cup of water
  • 1 cup of mixed mushrooms
  • 3 sprigs of fresh tarragon
  • 1 teaspoon of salt
  • 1 teaspoon of ground black pepper
  • 2 tablespoons of olive oil

Instructions:

  1. Heat one tablespoon of oil in a wide-based saucepan and sear the chicken breasts on all sides. Set aside on some kitchen towel to drain off the oil.
  2. Wipe out the pan, and then heat the second tablespoon of oil. Add the sliced mushrooms to the pan, and cook until they release their water. Drain this into a cup.
  3. Add the cream and water to the pan, as well as the tarragon and the salt and pepper. 
  4. Slice the chicken into pieces and add this to the mix. Cook on a medium heat for 15-20 minutes, then serve.
