These Mini Eggplant Pizzas Are an Amazing Vegan Snack

Making a pizza 100% vegan is not a difficult task, as long as you’re using plant-based toppings. The difficult part, however, is making your crust low-carb, and one of the easiest ways to do it is using something else in its place—such as eggplant.

This is exactly the idea behind the tasty mini eggplant pizzas, which can be made without a crust. In addition to being healthier than your regular pizza, they’re also easier to make because you only have to slice your eggplant, decorate it with toppings, and fire up your oven.

Ingredients:

  • 2 eggplants
  • 200 g cherry tomatoes
  • 100 g plant-based cheese
  • 50 g marinated mushrooms
  • 5 basil leaves
  • salt and pepper

Instructions:

  1. Cut the eggplant into rings or lengthwise in half if you want to get larger pieces.
  2. Chop the mushrooms, cherry tomatoes, and basil into smaller pieces, and grate your plant-based cheese. Arrange them on top of your eggplant slices.
  3. After preheating the oven to 400°F, put the mini eggplant pizzas inside and let them bake for about 10 minutes until they release their juice and get a nice, golden color.
  4. Enjoy the mini pizzas while warm with a dip of your choice.
