The Perfect Chicken Soup Recipe

Ingredients:

  • 1 whole chicken, preferably organic
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • Fresh herbs (such as thyme, parsley, and rosemary), chopped
  • Salt and pepper to taste

Instructions:

  1. In a large pot, place the whole chicken and cover it with water. Bring to a boil and skim off any foam that rises to the surface. Reduce the heat and let it simmer for about 1 hour, until the chicken is tender and cooked through.
  2. Remove the chicken from the pot and let it cool. Shred the meat and set it aside. In the same pot, add diced carrots, celery, onion, and minced garlic. Sauté until the vegetables are tender.
  3. Pour in the chicken broth and add the bay leaf and fresh herbs. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes to allow the flavors to meld together.
  4. Add the shredded chicken back into the pot and season with salt and pepper to taste. Simmer for an additional 10 minutes. Serve the chicken soup hot, garnished with fresh herbs.
