Do you still have a leftover can of pumpkin puree from the pumpkin pie you made on Thanksgiving? Make these irresistible pumpkin spice pancakes that are a treat for the entire family. They come together quickly and give you instant warmth on a cold winter day.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 5 tbsp brown sugar
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 2/3 cup pureed pumpkin
  • 1 1/3 cups buttermilk or milk
  • 2 eggs
  • 3 tbsp melted butter
  • 1/4 tsp vanilla extract
  • Vegetable oil or butter for cooking

Instructions:

  1. In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and cloves. Make sure to break apart all of the clumps of brown sugar.
  2. In a separate bowl, whisk together the pumpkin puree, buttermilk, eggs, melted butter, and vanilla. 
  3. Add the wet ingredients to the large bowl of dry ingredients. Mix to combine.
  4. Melt the butter or heat oil in a large pan on medium heat.
  5. Put 1/3 cup batter into the pan.
  6. Cook until the edges begin to brown and then flip to cook the other side.

Pancakes are those weekend treats that everyone looks forward to. However, it can be a little stressful trying to figure out the right recipe to ensure you get beautiful, fluffy pancakes every time. Well, luckily, this recipe for pancakes is here to help you out!

You can make these pancakes just as they are, or add in whatever sweets or fruit you’d like. No matter what extra ingredients you use, you’ll have gorgeous pancakes every time.

Ingredients

In this recipe, there are two distinct groups of ingredients; the wet and the dry.

The dry ingredients are:
1 cup of all purpose flour minus 2 tablespoons
2 tablespoons of cornstarch or arrowroot powder
1 tablespoon sugar
1 tablespoon baking powder
a pinch of salt

The wet ingredients are:
⅔ cup milk
1 egg
a splash of vanilla

Recipe

Start by mixing together the dry ingredients and whisking the wet. Pour the wet mixture into the dry, stir until it just comes together.

At the end, add in 1 tablespoon of melted butter into the batter to give it a super savory yummy finish.

Put a pan on medium-low heat and melt some butter. Start frying up the pancakes , keep them warm in the oven, and serve with your favorite toppings!
