From pie at Thanksgiving to cookies at Christmas, the holidays are undoubtedly a season of indulgence. While there’s certainly nothing wrong with using food for celebration, too much sugar can take a toll on our health over time, and come January, we typically feel like we need a bit of a reset. Fortunately, eating healthy doesn’t have to mean giving up treats entirely. Baked apples are a great way to enjoy something sweet without causing a major blood sugar spike in the process. Here’s how we make them.

Ingredients:

  • 4 medium-sized apples, we recommend Granny Smith or Honeycrisp
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons chopped walnuts
  • 2 tablespoons raisins
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup water
  • Optional: Greek yogurt for serving

Instructions:

  1. Preheat your oven to 375°F.
  2. Wash and core the apples. You can leave the skin on for added nutrition and texture, or peel them if you prefer.
  3. In a small bowl, mix together the melted butter, oats, walnuts, raisins, and spices.
  4. Place the cored apples in a baking dish. Spoon the filling mixture into the center of each apple and press down gently to ensure it’s tightly packed.
  5. Pour the water into the bottom of the baking dish. This will help to create steam and keep the apples from drying out.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes or until the apples are tender. Carefully pierce one of the apples with a fork to check for doneness.
  7. Once baked, remove the apples from the oven. Let them cool for a few minutes before serving.
  8. Serve warm, or top each apple with a dollop of yogurt as a low-sugar alternative to vanilla ice cream. Enjoy!

Vegetables and desserts rarely go well together, though carrot cake is a notable exception to this rule. Carrots have a subtle sweetness that pairs well with other common dessert flavors like cinnamon, and their high water content is a great way to add moisture without sacrificing texture.

While we’ll always love a good old-fashioned carrot cake (especially if it’s covered in cream cheese frosting), sometimes we’re in the mood for something a bit healthier. Fortunately, some creators have found ways to incorporate the flavors of carrot cake into nutritious and delicious treats that are every bit as good as the real thing.

Carrot Cake Energy Balls

Traditional cake isn’t exactly known for its portability, so when we’re in need of a snack on the go, we love these carrot cake energy balls. They’re made with fresh, wholesome ingredients like shredded carrots and walnuts and sweetened with dates instead of traditional sugar. Leave them bare or roll in shredded coconut for flavor and additional healthy fat.

Carrot Cake Baked Oatmeal

Start your day right with this carrot cake-oatmeal hybrid by Minimalist Baker. Along with grated carrots, it contains all of the classic add-ins like walnuts and raisins for a sweet breakfast treat that’s 100% vegan. We love to eat ours warm with a sprinkle of cinnamon on top.

Carrot Cake Smoothie

We’ll never say no to a smoothie, especially one that’s made to taste like dessert. This recipe by Foxes Love Lemons is a filling option with plenty of fiber from walnuts and two whole carrots. Vanilla Greek yogurt and a touch of honey round it out with some sweetness, while traditional carrot cake spices like cinnamon and nutmeg add a bit of warmth.

Desserts can be a killer when you’re trying to stay in shape. They can be incredibly addicting and hard to avoid, but thankfully there are desserts that are healthier than others. If you’re trying to maintain a healthy and well-balanced diet, here are three desserts ideas to hold you over when your meals are done.

Fresh Fruit

You can’t really go wrong with a large tray of fresh fruit. Whether you love oranges, mangos, peaches, nectarines, apples, pears, plums, or pineapples, they’ll always round out your dinner in the best way. These natural delights are healthy and sweet, making them an excellent healthy dessert choice.

Sorbet

Sorbet isn’t always the healthiest thing in the world, but it’s a heck of a lot more healthy than cakes, pies, ice cream, or cookies. If you simply need to have something cold and sweet, you could do a lot worse than sorbet.

Nuts

If you’re less about the sweets, a fun thing to nosh on during desserts are nuts. From roasted almonds to cashews, there are countless delicious varieties of nuts you can munch on with a steaming cup of tea. As long as you eat them in moderation, they can be super healthy for you.

With the age of the internet has come countless food blogs of every niche imaginable. While some food bloggers keep things classic with dessert recipes utilizing butter, cream, and sugar, others are a bit more experimental.

Many design their recipes with a healthy focus in mind, and some have even found ways to incorporate vegetables. Don’t get us wrong, they often still contain sugar, but at least you can feel good about getting some extra vitamins and minerals while you indulge, not to mention the added fiber will help keep you full. Here are some of our favorite veg-filled desserts.

No-Bake Red Velvet Slice from Panaceas Pantry

This raw red velvet slice has all of the chocolate that we love in a red velvet cake but is made red using shredded beetroot rather than food coloring. Beets are high in fiber and also contain nutrients good for heart health.

Minimalist Baker’s Sweet Potato Brownies

These brownies are so fudgy and decadent that you’d never know they’re made with sweet potato. Give them a try to get your daily dose of vitamin A in the most enjoyable way—they’re even better topped with ice cream.

Carrot Cake Balls

Most of us are familiar with carrot cake, but if you’re pressed for time, baking a cake isn’t always the best option. Instead, we give you these carrot cake balls. They’re light and sweet with all of that familiar carrot cake flavor. You can serve them plain or even roll them in coconut.

Halloween may be way behind us, but that doesn’t mean we can’t still enjoy candy. While fun-sized Snickers are one of our favorites, it’s hard to enjoy more than a few before a sugar crash. When the craving for something sweet strikes, we like to snack on things that also have protein and fiber. This helps keep us full and prevents blood sugar spikes. One of our go-to’s is these date-based bites—they have the familiar flavor of Snickers we love, but without all of the unnecessary sugar. They’re ready to eat in just a few minutes, but they taste even better if you pop them in the freezer.

Ingredients:

  • 15 dates, sliced down one side longways and pitted
  • ⅓ cup shelled, unsalted peanuts
  • ⅓ cup chocolate chips
  • 1 teaspoon coconut oil
  • 2 tablespoons honey

Instructions:

  1. Place dates on a parchment lined tray.
  2. Fill each date with a few peanuts, 3-4 or however many fit.
  3. Place chocolate and coconut oil in a microwave safe bowl, microwave in 30 second increments, stirring in between until mixture is melted.
  4. Drizzle chocolate mixture over peanut-stuffed dates.
  5. Put dates in the freezer for about 15 minutes to allow chocolate to harden.
  6. Drizzle with honey.
  7. Enjoy!

  • 3.5 oz dark chocolate
  • 1 teaspoon coconut oil

Instructions:

  1. In a mixing bowl, combine the Greek yogurt, peanut butter, and maple syrup (or honey). Mix well until all the ingredients are thoroughly combined.
  2. Spoon dollops of the mixture onto a plate lined with parchment paper, forming small bite-sized portions.
  3. Place the plate in the freezer and let the bites freeze for approximately 1 1/2 to 2 hours until they are firm.
  4. If desired, melt the dark chocolate with the coconut oil in the microwave, using short bursts of heat and stirring in between until smooth.
  5. Take the frozen bites out of the freezer and dip each one into the melted chocolate, ensuring they are fully coated. Let the excess chocolate drip off before placing them back on the parchment paper-lined plate.
  6. Once all the bites are coated, place the plate back in the freezer and let the chocolate set for a few minutes.

  7. Enjoy!
